Optimum welding table size?
Besides just table size, it is more important that you can have full access to / from all four sides. Table in the middle of the room, in other words.
There will be welding assemblies that you don't want to move, or that are clamped to the table.
Other important thing: FLAT. Square is nice too. That way you can use table edges for aligning / clamping.
Just looked at your math again, tmt. You know, you can leave some space between the channel; it needn't be exactly 30" or 45". That would give access for clamps and lets you choose your own table width.
Several larger shops I've worked at just use two sawhorses and two or three lengths of channel floating on top -- that way the table can be shifted / adjusted to suit your mood.

(what I have? 1 m x 2 m, (roughly 3' x 6') because that's the standard size of sheet metal sheets. Convenient. Table is thick wood, covered with sheet metal for conductivity / spatter protection. Could be better, but there is free space for at least eight feet in any direction, so big stuff = no problem.)
PS: Mike W, I like that floating Antigravity model of milling head in your shop pic. That must be really handy...
